In the Advent season, delicious cookies should not be missing. But aren’t the Christmas delicacies a red rag for every nutrition-conscious athlete?
No because protein-rich whey vanilla crescents can be enjoyed without a guilty conscience during the holidays.
Ingredients for approx. 60 cookies:

- 250 g almond flour
- 100 g ground almonds
- 3 egg yolks
- 1 vanilla pod
- 200 g butter
- 1 pinch of baking powder
- 130 g of xylitol
- 30 g whey protein vanilla
- 50 g powder xylitol
- 1 pinch of salt


Preparation:
- Preheat the oven to 180°C and line the baking sheet with parchment paper.
- Mix the flour and baking powder in a large bowl. Stir in the almonds, egg yolks, butter, whey protein and xylitol. Add the vanilla pulp and a pinch of salt.
- Knead the entire mixture with your hands to form a smooth dough and chill for 1 hour.
- Dust the work surface with flour. Divide the dough into 1 euro pieces and roll. Then shape the dough pieces into crescents and distribute them on the tray.
- After 10-12 minutes of baking time, take out of the oven and sieve powder xylitol on the hot vanilla crescents.
